Egg and cabbage fried rice

 The kids liked this 


Ingredients
  • 2 cups cabbage (shredded)
  • 2 large eggs
  • 2 cups cooked white rice (ideally cold and leftover)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons cooking oil (divided)
  • 1.5 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and black pepper (to taste)
  • 2 green onions (chopped, for garnish)
Instructions
  1. Whisk the eggs in a small bowl with a pinch of salt and pepper.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Pour in the eggs, scramble until just set, then remove them and set aside on a plate.
  3. Add the remaining oil to the same pan. Add the chopped onion and cook for 3 minutes until soft.
  4. Stir in the minced garlic and shredded cabbage. Cook and stir for about 4 to 5 minutes until the cabbage is tender and slightly browned.
  5. Turn the heat to high. Add the cold rice, breaking up any clumps with a spatula. Stir-fry for 2 minutes until heated through.
  6. Drizzle the soy sauce and sesame oil evenly over the rice. Toss well to combine and let it crisp slightly for another minute.
  7. Return the cooked eggs to the pan, breaking them into smaller pieces. Mix everything together.
  8. Garnish with chopped green onions and serve warm

Greek salad

 The kids liked this and I want to remember the recipe 


Salad: 

- tomatoes (3 med)

- cucumbers (1/2 English) 

- red onion (1/4 of one sliced?)

- bell pepper (half of one) 

- Kalamata olives 

- Greek feta cheese 

- dried oregano 

Dressing: 

- 1/4 c. Olive oil

- 1 T. Red wine vinegar

- pinch salt 


1. Cut up veggies in chunks and put on a plate. Add olives. All of this is to taste. 

2. Slice feta in slabs and lay on top of veggies. Sprinkle with dried oregano. 

3. Make dressing and pour over. This served 3 people.

Canadian Crepes

 This is my mimi’s recipe - authentic from Quebec!!

Canadian Crepes 

- 3 eggs 

- 1 1/2 cups flour 

- 1/4 teaspoon salt 

- 2 cups milk 


Mix all the ingredients together. Cook in a hot pan with a little bit of oil.
